Zingy Chilli Sauce

So simple to make and everyone I’ve made it for seems to love it! The best comment I’ve had was that he “loved it so much, he’d put it on his Frosties!”.

I make this in my Sage Boss To Go as it creates a really smooth sauce.


2 lemons (unwaxed), zest and juice

1 large bunch of corriander

3-4 green chillis – you can add more or less, use red or yellow ones – experiment and see what you like, but remember, you can add more if you want it hotter, but it’s harder to go the other way!

1 large clove of fresh garlic (or a teaspoon of chopped frozen garlic!)

1 – 2 teaspoons of sugar

1 teaspoon of salt



First, zest the lemons directly into the blender container. Try to aim the zester into the container so that the tiny spray of lemon oil that bursts out of the lemon as you run the zester over the rind all ends up in there. I think this is what gives the sauce the magical zing!

Next add everything else and squeeze the juice of the lemons into the container. Blend to a really smooth sauce. Will keep in the fridge for at least a week in an airtight container.
