My sons love making pancakes for breakfast….. it’s a messy process, a two year old breaking eggs but they tend to eat what they make! So worth it, I guess!?
Ingredients (makes 6 smallish pancakes)
55g plain white flour
Small pinch of salt
10g caster sugar
1 large egg
100 ml whole milk
35ml water
1 tablespoon melted, unsalted butter
Bit more melted butter for the pan
Method
Mix the dry ingredients together then beat in the egg and add the liquid gradually, whisking all the time, until it forms a batter. It should be about the pouring consistency of single cream.
Heat a non-stick pan on the hob and brush a tiny amount of butter on it. Ladle some of the batter onto the hot pan and rapidly swirl it about the pan to spread it. Let it cook until the edges just begin to brown then turn it (use a spatula, or flip it if you’re feeling brave!). Cool for about 30s on the other side and slide it onto a plate.
Serve with a squeeze of lemon and sugar…… or Nutella!
